Ingredients
- 2 tablespoons oil
- 1 small red capsicum, sliced
- 1 small carrot, sliced lengthwise into thin slices
- 1 small zucchini, sliced lengthwise into thin slices
- 150 g pumpkin, sliced into thin slices
- 250 g chicken loin fillets
- 2 tablespoons balsamic salad dressing
Cooking Instructions
Pre-heat a hotplate to a medium-high.
Combine 1 tablespoon of oil, capsicum, carrot, zucchini and pumpkin in a mixing bowl.
Grill for 4-6 minutes, or until lightly browned. Turn over, baste and grill until lightly browned and cooked through.
Meanwhile, combine the chicken with remaining 1 tablespoon of oil in a mixing bowl.
Grill for 3 minutes per side, or until lightly browned and cooked through.
Place the vegetables on serving plates, place the chicken on top and drizzle with the salad dressing.
Season to taste and serve.
